Bael candy is a traditional sweet made from the pulp of ripe bael fruit, known for its rich flavor and health benefits. The hard outer shell of the bael fruit is broken to extract the soft pulp inside, which is then cleaned and separated from seeds and fibers. The pulp is cut into small pieces or shaped into cubes for further processing.
These pieces are first lightly boiled or soaked to soften them and remove any raw taste. After that, they are cooked slowly in a concentrated sugar syrup until they absorb the sweetness and develop a glossy appearance. To enhance flavor, ingredients like cardamom or a little lemon juice may be added.
Once properly cooked, the sweetened pieces are removed and spread out to dry, either under the sun or at room temperature. Drying gives the candy its firm, chewy texture and helps increase its shelf life.
